2 lbs. LEAN ground beef (or ground turkey)
1 Qt. water
2 med. onions, Chopped
2 - 8 oz. cans tomato sauce
4 cloves garlic, minced
2 Tbsp vinegar
1 lg. bay leaf
1/2 tsp ground cloves
2 tsp Worcestershire sauce
1 tsp cinnamon
1 tsp allspice
1 tsp. cayenne pepper
1 tsp ground cumin seed
5 Tbsp chili powder
1/2 oz. unsweetened chocolate (or tsp. cocoa)
1 1/2 tsp. salt
1 can chili hot beans (or kidney beans)
In a 4 - quart pot, add ground meat to water. Stir until it is separated into a fine texture. Boil slowly for 1/2 hour. Add all the other ingredients. Stir to blend and bring to a boil. Reduce heat and simmer uncovered about 3 hours. You can cover the pot for the last hour if chili is thick enough. Refrigerate overnight to skim off fat if desired. Add a can of
chili hot beans to 1 cup of the chili, heat, and mix with remainder of the chili. Serve with spaghetti, grated cheese and chopped onion.
