Chicken or Turkey Pie

    Chicken Pie

    6 T butter
    6 T flour
    2 C chicken broth (from the cooked carcass)
    1 C heavy cream
    1/2 t freshly ground pepper
    salt (if I use bullion for the broth, I omit salt)
    4 C cooked chicken (or turkey--I only use about 2 C)
    12 small white onions (I use what I have-scallions
    this time)
    3/4 C peas, cooked (I use mixed vegetables & mushrooms
    = to 1 cup or more)
    1 recipe for 9 inch pie shell (I use Pet Ritz deep
    dish)

    Preheat the oven to 425F (220C). Melt the butter in a
    sauce pan, stir in the flour, and cook. stirring for 2
    minutes. Slowly add the broth, cream, pepper and salt
    to taste. Cook for 5 minutes, until thickened and
    smooth. Put the chicken pieces in a deep pie plate or
    casserole, cover with sauce, and stir in the onions
    and peas (vegies). Place the prepared pie crust over
    the casserole, allowing enouh overhang so that the
    edges can be crimped. Cut vents in the crust to allow
    the steam to escape. Bake for 25 - 30 minutes or until
    the crust is nicely browned.

    Serves 6
