Chicken casserole w artichokes

3-4 lb frying chicken, cut up. Thighs work nicely.
1/2 C flour
1/2 C cooking oil
1 medium onion sliced
1 bottle catsup (1-1/4 C)
1-1/4 C water
3 TBS worchester sauce
3 TBS wine vinegar
3 TBS light brown sugar
1 pkge frozen artichoke hearts (I didn't like the frozen so I use canned, well rinsed)
1 sm can pitted ripe olives
Dust chicken with flour and fry in oil till golden brown. Remove from skillet and place in casserole. Leave about 1 TBS oil in skillet and saute onion. Add catsup, water, worchester sauce, vinegar, brown sugar and pepper. Blend and pour sauce over chicken. Cover and chill.
About 90 minutes before serving, heat oven to 350. Bake chicken (still covered) 1 hour. Add artichoke hearts and olives. Continue cooking 20-30 minutes. Serve in casserole.
Note: be careful if you are using a ceramic casserole, it may crack if you put it in the oven from the refrigerator. Let it come to room temperature before putting it in the oven.
This goes well with couscous or wide noodles.
