2 whole fryers
2 medium onions, sliced
4 celery ribs
3 bay leaves
salt to taste
2 cans (or 2 frozen packages) sliced okra 2 - 3 (14 oz.) cans diced tomatoes
1 1/2 Tbls. tabasco sauce
1 1/2 c. (or more, depending on how thick you like your soup) rice 1 can mushrooms
1 1/2 tsp. gumbo file powder, optional
Cover chicken with water. Add onion, celery, bay leaves and salt. Simmer until tender. Remove meat from bones; cut into bite-sized pieces; return to broth. Add remaining ingredients. Simmer until rice is tender. Remove from heat and add gumbo file powder, if desired. Enjoy! Beth email@example.com
