Cherry Pie Special

    2 (1 lb.) cans pitted tart red cherries
    1 cup sugar
    2 1/2 Tblsp. quick-cooking tapioca
    1/4 tsp salt
    1/4 tsp almond extract
    1 tsp lemon juice
    4 drops red food color
    Pastry for 2 crust 9 inch pie
    1 Tblsp margarine
    1/4 cup sugar
    Sugar
    Drain cherries, reserving 1/3 cup liquid. Combine 1 cup sugar, tapioca, salt, almond extract, lemon juice, red food color and reserved 1/3 cup liquid in bowl; mix well. Add cherries; let stand 15 minutes.
    Arrange cherry mixture in pastry lined pie plate. Dot with butter. Sprinkle with 1/4 cup sugar. Roll out remainng pastry and cut in strips. Top filling with strips arranged in lattice fashion. Sprinkle top of pie with sugar. Cover pie rim with strip of aluminum foil. Bake in 425* oven 40 minutes or until golden brown. Cool on rack.
