Caremelised Pork Tenderloin

    Pork Tenderloin
    Salt and Pepper
    1 Tsp groundnut oil
    2oz granulated sugar

    Sauce

    2 Tbsp white wine vinegar
    1 tsp tomato puree
    5 fl oz chicken stock
    dash Worcestershire sauce
    dash Tabasco sauce

    Season the pork and then coat with the sugar. Heat the oil in a frying pan and when hot put in the pork. Turn regularly to ensure even browning. When richly brown, transfer to a pre heated oven for 12 - 15 minutes (or 6 - 8 mins longer for well cooked)

    Meanwhile make the sauce in the same frying pan. Add wine vinegar, stock and tomato puree and bring to the boil. Sieve and then add tabasco and worcestershire sauces to taste. Add a knob of butter or cornflour to thicken slightly.
