3 Tbsp olive oil
32 tiny white onions
3 1/2 pounds stewing beef
6 cloves garlic
3 Tbsp flour
1 small can tomato paste
1 large can Italian plum tomatoes,drained
2 cups red wine
1/2 cup strong beef stock
"Kitchen Bouquet", salt and pepper to taste
1 Tbsp ground cinnamon
1 tsp. freshly-grated nutmeg
2 tsp. ground coriander
3 bay leaves
l/2 cup raisins
First, peel the onions by dropping them in boiling water for a few minutes. You will then find that the skins slip off more easily, and that the operation is not so much of a tear-jerker as it might otherwise be. Next, heat the oil in a large sauce pan, and brown the onions over fairly fierce heat, stirring them often. Cut the meat into chunks and shake around in a plastic bag with the flour. Add to the pan, together with the garlic, and brown the meat on all sides. Then simply add everything else, bring to the boil, put lid on and simmer until cooked (2-3 hours, depending on the quality of the meat). Serve with small, plainly boiled potatoes,macaroni or rice.
