1 Medium Pineapple
2 Tbsp margarine or butter, melted
2 tsp packed brown sugar
1/2 tsp. curry powder
1/2 cup vanilla yogurt
4 Tbsp coconut, toasted
Cut pineapple crosswise into six, 1/4 - in. thick slices. Stir together margarine, brown sugar, and curry powder.
Grill pineapple slices on an uncovered grill directly over medium coals for 6 to 8 minutes or till heated through turning once and brushing once or twice with margarne mixture. To serve, cut slices in half. Serve warm topped with yogurt and coconut.
