8 Hour Brisket Barbeque

4 - 5 lb beef brisket
1 large garlic clove, minced
1 tbsp chili powder
1 tsp paprika
1/2tsp salt
1/2 tsp ground cumin
1/2 tsp dried sage, crumbled
1/2 tsp sugar
1/2 tsp oregano
1/4 tsp ground red pepper ( cayenne)
1/4 tsp ground black pepper
Oven to 200*.
Rub garlic into both sides of brisket. Combine remaining seasonings in a small bowl and mix well. Rub into the brisket. Place meat fat side up on a large piece of aluminum foil and wrap tightly. Place in shallow roasting pan. BAke 8 hours or until tender. Serve sliced, hot or cold, with the following sauce.
Melt 2 tbsps butter or oil in a large skillet and add a medium onion, chopped. Cover and cook on low heat till onion is translucent. Add: 1/2 cup water, 1/2 cup prepared chili sauce, 1/2 cup ketchup, 1/4 cup cider vinegar, 2 tbsps lemon juice, 2 tbsps. brown sugar, 2 tbsps Worcestershire sauce, 1 tsbsp molasses, 1/2 tsp salt, 2 tsps. dry mustard, 1/2 tsp freshly ground ppper, 1/2 tsp paprika. Bring to a boil and reduce heat. Simmer uncovered 30 minutes, stirring occasionally. Serve at room temperature with sliced meat.
