Lemongrass Basil Chicken

Serves: 4

2 bags of Numi Mexican Fields Lemongrass Teasan
(See Creative Cuisine; December 10, 2000)
1 1/2 cups hot water
1 tbsp. olive oil
2 cloves garlic, crushed
4 tbsp. chopped fresh basil (Reserve 2 tbsp. for sauce.)
1 lb. chicken breasts
2 tbsp. butter or margarine

Steep teasan bags in hot water for 5 minutes. Remove and discard bags; let teasan cool. Pour 3/4 cup teasan into a small bowl. (Reserve remaining 3/4 cup for sauce.) Add olive oil, garlic, and 2 tablespoons basil. Place chicken breasts in a single layer in casserole dish and pour marinade over. Cover with plastic wrap and refrigerate at least 4 hours, turning chicken breast several times.

When ready to cook, melt butter in a large skillet over high heat. Brown chicken on both sides (discard marinade). Reduce heat to medium, cover, and cook 6 minutes or until chicken is cooked through, turning several times.

Transfer chicken to platter, increase heat to high, add remaining teasan and cook, stirring often until liquid is reduced by half. Add basil, cook 1 minute and pour sauce over chicken to serve.
